World Croquette Day pays homage to the traditional snack

Whether made of chicken, ham, spinach or rocafort cheese with almonds, croquettes are versatile. Almost everyone likes the stuffed breadcrumb rolls, and today is the day to celebrate the traditional, much loved snack. January 16 is world croquette day and it is a good time for croquettes. Once the preserve of grandmothers in family kitchens, croquettes of every kind imaginable are to be found even in the fanciest restaurants. Ricard Fusté, owner of the Pepa Croqueta shop in Barcelona, says the secret to a good croquette is that they be “crunchy but thin”.
